Aldis has Breast of Lamb, split and roasted, it’s delicious. This year instead of a leg of lamb I’m making split breasts.
I decided to marinate this lamb but I the past salt and pepper proved delicious too.
Marinade
1 tsp cumin
1 tsp chili flakes
2 tsp paprika
2 sprigs of rosemary leaves
2 springs fresh mint leaves
2 slices of lemon
3 T red wine vinegar
5 T olive oil
2 T salt
I blended this in my mini processor and then put the lamb in a gallon bag and poured the marinade over. Overnight.
